Using Request to register Meetings & Events and track spend

We are trying to get employees to log any meetings/events and are considering using Request  function.  Ideally we want to be able to see what events are being planned, what format(F2F or virtual), budget vs actual costs etc.  Has anybody out there done anything similar?

We use the Event Request for multiple participants and the Request for a single participant. We are looking for a consolidated report that shows the total approved budget vs the actual expenses claimed for each event.
